Garlic Parmesan Chicken & Kale Skillet Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1½ pounds boneless, skinless chicken breasts, sliced into ½-inch strips
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • Pinch of red pepper flakes (optional)
  • 1 large bunch flat-leaf kale (about 12 ounces), stems removed and chopped
  • ½ cup dry white wine
  • ½ cup grated Parmesan cheese
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chicken, season with salt and pepper, and sauté for 6–8 minutes until fully cooked. Remove the chicken from the pan and set aside.
  2. In the same skillet, add the onion, garlic, and red pepper flakes. Cook for about 2 minutes, stirring until the onions begin to soften.
  3. Add the kale, white wine, and a pinch of salt. Cover and cook for approximately 5 minutes, stirring occasionally, until the kale becomes tender.
  4. Return the chicken and any juices to the skillet. Stir in the Parmesan cheese and lemon juice until everything is well combined.
  5. Taste and adjust seasoning as needed. Serve hot.
