One thing I love—as you can tell from many of our Ravoke recipes—is keeping things simple, quick, healthy, and affordable. Most of us have tasted a Caprese salad before, but roasting the tomatoes adds a depth of flavor that truly transforms the dish. It’s also a salad you can easily make your own. Be creative with it! Pair it with a main course or enjoy it on its own as a fresh, healthy snack.

  • 12 plum tomatoes, halved lengthwise, seeds removed
  • 1/4 cup good olive oil, plus extra for drizzling
  • 1 1/2 tablespoons balsamic vinegar
  • 2 large garlic cloves, minced
  • 2 teaspoons sugar
  • Kosher salt and freshly ground black pepper
  • 16 ounces fresh salted mozzarella
  • 12 fresh basil leaves, julienned

Directions

Step 1 — Roast the Tomatoes

Preheat the oven to 275°F (135°C).
Arrange the tomatoes cut side up on a sheet pan in a single layer. Drizzle with olive oil and balsamic vinegar, then sprinkle with garlic, sugar, 1½ teaspoons salt, and ½ teaspoon black pepper.
Roast for 2 hours, until concentrated, softened, and caramelized. Cool to room temperature.

Step 2 — Assemble the Salad

Slice the mozzarella into pieces slightly less than ½ inch thick. If they’re larger than the tomatoes, cut them in half for even layering.
Arrange tomatoes and mozzarella alternately on a platter. Scatter basil over the top, season lightly with salt and pepper, and finish with a drizzle of olive oil.
Serve at room temperature for full flavor.
