Ingredients

  • One 5-ounce container baby spinach
  • 1 tablespoon unsalted butter
  • 1 shallot, thinly sliced
  • 1 clove garlic, minced
  • 3 ounces thin-sliced deli ham (preferably low or no sugar added), coarsely chopped
  • 1 ½ cups heavy cream
  • ½ teaspoon whole-ground mustard
  • ⅛ teaspoon freshly grated nutmeg
  • ⅓ cup grated Parmesan
  • 4 large eggs
  • ¼ cup grated mozzarella
  • 2 tablespoons fresh parsley leaves, chopped

Directions

  1. Prep the Spinach
    Bring a medium pot of salted water to a boil. Fill a large bowl with ice and water.
    Add the spinach to the boiling water and stir to wilt—just a few seconds.
    Use a slotted spoon to transfer spinach to the ice water bath.
    Drain, then twist in a clean kitchen towel to remove all moisture. Separate the clumps and set aside.
  2. Cook the Creamy Base
    Preheat the oven to 400°F (200°C).
    In a medium skillet over medium-high heat, melt the butter.
    Add shallots and cook until soft and lightly browned, about 2 minutes.
    Stir in garlic and ham; cook 1 minute more.
    Pour in the heavy cream and whisk in mustard, nutmeg, salt, and pepper.
    Bring to a simmer, then whisk in Parmesan.
    Simmer until slightly thickened (2–3 minutes), then stir in spinach. Turn off heat.
  3. Assemble and Bake
    Arrange four 8-ounce ramekins on a baking sheet.
    Divide the creamy spinach mixture among them.
    Use a spoon to make a small well in the center of each.
    Crack an egg into each well, season lightly with salt and pepper, and top with 1 tablespoon mozzarella.
    Bake until yolks are cooked to your liking and the tops are golden and bubbling, 15–20 minutes.
  4. Finish and Serve
    Sprinkle with fresh parsley and serve warm.
